Summer green salad: the Green Goddess salad

A tasty raw salad with crackers

Here is a recipe for a very simple raw green salad, fresh and perfect for the summer!

INGREDIENTS:

  • 65g pumpkin seeds 

  • 45g sunflower seeds 

  • 150g flaxseed 

  • 40g sesame seeds 

  • 2 tbsp malted yeast 

  • 1 handful of nuts

List of fresh products:
  • 240ml boiling water 

  • salt 

  • juice of one lemon 

  • 2 shallots 

  • 2 cloves of garlic

  • 1 handful of spinach 

  • chives 

  • 1 avocado 

  • 1 half Chinese cabbage 

  • 1 cucumber 

RECIPE:

Prepare the crackers. Preheat the oven to 160°C. Put the sunflower seeds, pumpkin seeds, flax seeds and sesame seeds with a pinch of salt in a bowl. Add the boiling water and stir for a few moments. 

Spread the mixture as thinly as possible with the back of a spoon on the baking paper or mat. Bake for about 35 minutes at 160°. 

Meanwhile, prepare the salad. 

Blend together the avocado, lemon juice, shallots, garlic cloves, walnuts, spinach, malted yeast, a little chives, a pinch of salt and a drizzle of olive oil to make a thick, guacamole-like sauce. Set aside. 

Chop the cabbage and cut the cucumber into small pieces. Add the sauce and mix well. Sprinkle with chives.

Serve with the cooled crackers, broken into pieces.
